Very Best Lobster Mac and Cheese

Jalapeno Peppers kick this up a notch!

One of my favorite restaurants, Flemings-Newport Beach, serves scalloped potatoes aka au gratin potatoes with jalapeno peppers in them, and it is a perfect blend of flavors. Bob and I started talking about it, and wondered if we should try that with macaroni and cheese and lobster, and add jalapenos. Success!

There are 2 different ways to make this….one is to start with a prepackaged macaroni and cheese dinner or make your own mac and cheese from scratch. I have found that the prepackaged mix works perfectly, and is quicker and easier. That’s the recipe I am sharing with you today. Homemade mac and cheese will be posted separately at a later date.

Ingredients

½ to 1 pound of cooked lobster

1 prepackaged macaroni and cheese box

1 jalapeno pepper

Cheddar Cheese

¼ cup Milk

1 Can Green Beans, if using

Parmesan Cheese (grated)

Parmesan Cheese (shaved)

Preparation

Pre-heat your oven to 350 degrees. Cook the macaroni per the directions on the box. Drain. In the same big saucepan, add the cheese mixture that comes in the box, add cheddar cheese (about 2 cups) and the grated parmesan cheese and mix well over heat to keep it all melting. Add the macaroni to the cheese sauce. Mix well. Add the lobster and jalapeno, mix well. At this point, I like to add a can of green beans, so if using, add and mix well. Put all the mixture into a large casserole dish. Lay the shaved parmesan on top so when you broil it, it becomes brown and a little crusty.

Place in oven and bake for about 15 minutes. Change the setting on your oven to broil and place the casserole under the broiler. Watch very carefully, but let it broil until it is appealing to you for doneness. Remove from oven and enjoy.
