Best Ever Lime Frosted Cookies

Lip Smacking Good!

My, oh my, do these cookies get your taste buds up and running! I saw this recipe years ago, and thought they sounded good. I tried them, and to be honest, I couldn’t stop eating them. They are so light and buttery, and the taste of lime just sends them over the top. The frosting is so tart that it makes you want to pucker, but the flavor is so magnificent.

The hardest part of this recipe is waiting for the dough to chill long enough so they can be sliced. To keep myself from eating every morsel, I freeze some of them – you know the old adage, out of sight, out of mind. Sometimes it works!

You can make the log of cookie dough so it is in a round log or a rectangular log, whatever your preference.

Let’s get to the recipe, since you are going to want to make these immediately!

Ingredients

¾ Cup butter

¼ Cup granulated sugar

¼ Cup powdered sugar

2 Tablespoons grated lime zest

2 Tablespoons lime juice (preferably fresh)

¼ Teaspoon salt

1 ½ Cups flour

Frosting:

1 Cup of powdered sugar

2 to 3 Teaspoons lime juice

1 Teaspoon grated lime zest

Preparation

Cream the butter and sugars until mixed well. Add the lime juice, zest and salt, beat until combined. Add the flour until everything is combined (don’t overmix).

Lay out a piece of wax paper or parchment paper on the counter. Take the dough and shape it into a round log or a rectangular log. Fold over the paper and put dough into the refrigerator for a least 1 hour.

Preheat your oven to 350 degrees. I like to line my baking sheets with parchment paper. Slice the cookies about ¼” thick and place on sheets. Bake for approximately 12 minutes and check. They should be lightly golden around the edges. Remove from pan to either paper towels or a wire rack to cool.

To make the Frosting:

Whisk together the powdered sugar, lime juice and zest. If you want it thicker, add powdered sugar or if you need to thin it out, add lime juice, a little at a time.

These cookies freeze really well, just put waxed paper between layers.
