Mama’s Cheesecake Bars

Yum! Yum! Yum!

Every time I make these, I think of my Mama! She and I would make these together and she loved them so much. I had the best Mom ever…..she spent so much time with me from the time I was little and she taught me how to cook and bake. We lived in the country and my Dad was a farmer, so the women of that time knew how to cook. They would cook for the “masses of farmers”, and she was well known for her expertise.

We actually happened onto this recipe, and it was a winner.

Cheesecake Bars bite

Ingredients

½ Cup brown sugar

¼ Cup butter, softened

1 Cup baking mix (I like to use Bisquick)

½ Cup chopped pecans

1 – 8 ounce package cream cheese, softened

¼ Cup sugar

1 Tablespoon lemon juice

2 Teaspoons milk

½ Teaspoon vanilla

1 Egg

Preparation

Cream the brown sugar and butter until fluggy. Stir in the baking mix and nuts until crumbly. Reserve 1 cup for the topping. Press the remaining mixture into a greased 8 inch square pan. Bake about 12 minutes in a oven heated to 350 degrees.

Blend the cream cheese and sugar. Beat in the remaining ingredients until smooth. Spread over partially baked crust. Top with the reserved crumb mixture. Bake for 25 minutes or until set. Cool. Cut into squares. Store in the refrigerator.

This freezes very well. Place the cut squares on wax paper in a plastic covered container. Remove from freezer for at least 30 minutes before serving.
