Old Fashioned Meat Loaf

So Simple. So Delicious!

Meat loaf to me is just plain and simple. I don’t add vegetables, other than onion, and I don’t even add Ketchup. This is my Mother’s recipe that I grew up with, and I still make it today. I haven’t made any changes to the recipe, and I still love it.

I love leftover meat loaf as a sandwich with just butter on whole wheat bread. Maybe a sweet pickle on the side. If you have been reading my blogs, you will see that butter plays a big part of my eating, cooking and baking. Having grown up as a Farmer’s Daughter, butter was always a mainstay. Secret – I even eat Peanut Butter and butter sandwiches – no PB & J for me, ever, end of sentence!

Meat loaf is so easy to put together, place it in the oven and let it bake. Baked potatoes go well with meat loaf since you can’t really make gravy from the juices.

Ingredients

2 ½ pounds of Hamburger

1 half large onion – diced

½ Cup plain bread crumbs

2 Eggs

¼ Cup milk

Salt and pepper to taste – start with 1 full teaspoon of salt and ½ teaspoon of pepper

Preparation

Preheat oven to 375 degrees. Mix everything together very well. Place into a loaf pan. Bake for approximately 1 hour.

Option: Put ketchup on top once it has been removed from the oven.
