Peach and Mango Salsa

Delightful and refreshing, with a little Zing!!

I love Peaches! I love Mango! So why not, combine with a few other ingredients and make a delicious salsa?

When we were cruising on our boat a few years ago, we always tried to buy local fruits and vegetables. We also made a lot of salsa in those days (what am I talking about – it seems to be a staple in our household today). Anyway, we found some great peaches and mangoes, and I decided to make them into a salsa. I reduced the amount of tomatoes, and added the fruit, and kicked it up a notch.

I have also made this salsa with plums, nectarines, pineapple, papaya – use your imagination, or whatever you have on hand. I love this salsa!!

I actually add the serrano pepper too. It adds a dimension and a little extra zing. Try it!

Salsa Ingredients

Ingredients

2 – 3 Peaches

1 Large Mango

2 Roma Tomatoes

1 Avocado

1 Red Onion

1 Jalapeño pepper

1 Serrano pepper (optional)

Cilantro

1 Lime

Salt, pepper and garlic salt

Preparation

Salsa

Cut the peaches and mango into small pieces and place in a medium bowl. Chop the tomatoes, avocado, and onion into small pieces. Seed and mince the jalapeño pepper and serrano pepper (if using) and add to the other ingredients. Chop the cilantro and use the amount to your liking (1 use 1 to 2 Tablespoons).  Add the juice of the lime. Add salt, pepper and garlic salt to your liking. Mix everything and let it sit for about an hour before using so the flavors will meld together.

Enjoy with chips or add as a topping to your favorite meat, fish or chicken!

This will keep for 2 to 3 days in a sealed jar.
